Almost 40 years ago I moved to Belize and instantly loved the lush rain forest surroundings as well as the amazing tropical fruit trees, vegetables and medicinal plants. My husband, Bart, and I decided to start a lodge as we raised 5 children in the jungle next door to the town of San Ignacio, Cayo, Belize. We always focused on healthy living and eating, and, after studying plants for 30 years and taking courses in Chinese Medicine and herbs, we became health coaches and started a wellness center at the lodge.

A couple of years ago, we updated our restaurant to Nature’s Kitchen with a focus on healthy options. We have been featured on Happy Cow and catered to vegan, vegetarian, gluten-free, raw, and “regular” food diets with affordable prices and a welcoming environment. Due to the COVID19 Corona virus, we closed the lodge and Nature’s Kitchen in early 2020, but we hope to find a new owner for the lodge and reopen as soon as it is reasonable to do so.

Meanwhile, we are off on other adventures. I am on a constant health journey with my husband and I love finding new ways to incorporate nutrition into easy, delicious meals. A dear vegan friend, Nia, helped me create this website to share with my family and the world my recipes and discoveries about wellness of the mind, body, and spirit; hints about family and parenting; and my arts and life adventures.
